  • About Hitomebore

    The multi award-winning “super premium rice” cultivated by Organic and Non-Gmo rice grower Minoru Ishii Cultivated to a perfection–glossy and soft when cooked, sticky yet smooth texture. The immaculate balance of Hitomebore rice is a characteristic that requires a significant amount of effort.  This is made possible by fully understanding the nature, especially in the following aspects.

    Microorganisms:  Ishii’s rice field has 80 times more microorganisms than the average rice fields in Japan.  This softens the soil, making it difficult for the unwanted weeds to root deep.  This makes it an ideal and nutritious environment for rice.

    Wind:  Rice plants are distanced farther than average fields to allow ample airflow.  This eliminates moisture and mold formation, which, prevents plant diseases.  The space between plants also allows the sun to shine evenly throughout the field, creating consistency.  Climate:  Delaying rice planting and harvesting by approximately a month for optimum rice cultivation.  A large difference in temperature between morning and evening allows rice to pack itself with nutrients and "umami" flavor.  

    Sun:  Rice is dried with sunlight during the autumn season instead of using mechanical method.  The natural drying process takes up to 3 weeks compared to one day with machinery.  Slow drying in the sunlight results in rice that is complex, balanced, and offers rich flavours.  Hitomebore (ひとめぼれ) means falling in love at first sight.  "Fall in love" with hitomebore at the first bite.
